Only Three Ingredients

I found out about this recipe swap from my friend Renna. This week’s theme is Cookies and Bars.
My contribution is EZPB Cookies.
The recipe makes a dozen cookies, or one serving if you’re me.
Cream a cup of peanut butter with a cup of sugar. Stir in an egg. That’s it.
Drop teaspoons of this ridiculously simple dough on a lightly greased cookie sheet. Flatten with a fork. Here comes the important part:
Bake at 350 degrees fahrenheit until they just barely begin to brown around the edges. They’ll still be mooshy.
Take them out of the oven and leave them on the cookie sheet while you wash the bowl and utensils. In addition to keeping your kitchen tidy, this will allow the cookies to firm up just enough to remove from the cookie sheet with a spatula, if you’re careful.
Let them sit on a plate while you pour a glass of milk and put the carton back in the fridge. By that time, they’ll be firm enough to eat.
I use this when I need a goodie for a packed lunch in a hurry, when Some Child tells me it’s their turn to bring snack an hour before their Scout meeting, and when my children complain that there is nothing to eat in the house (which translates to “no cookies” in kidspeak).

You know, Kel, my waistline would have been better off if I hadn’t discovered there could be such a short time, and short list of ingredients, between me and something sweet to eat. ;-Þ

Holy Cow. Three ingredients! My dad is always talking about “cuppa cuppa cuppa” a recipe they used to make with a cup of fruit cocktail, and then I don’t remember the other two ingredients. I will definitely have to introduce him to these. Thanks!

I made these last night. Hubby loves them so I make them often. I don’t press them down though and they are really yummy if you smush a cheesecake filled hershey kiss on top…although those are seasonal and hard to find.
